Description/Taste
Blue corn plants are drought tolerant and can grow up to 1 to 2 meters in height. They produce long corn cobs that range between 17-23 centimeters in length. Blue corn cobs have pale green to white husks that when peeled back reveals dark blue kernels. Blue corn can be eaten young as a sweet corn and is typically sweeter than yellow corn. If allowed to mature and dried it can be used to make flour.
