Description/Taste
The Persian shelling bean is white until 10 days before harvest. It is at this final stage of growth in the pod that it develops its red and white streaked color. Once mature, it has a similar appearance to the cranberry bean. It is much smaller in size, yet the flavor is much richer.
Seasons/Availability
Persian Shelling beans are available late summer through fall.
Applications
This pretty shelling bean's color fades somewhat when cooked, but the less time it takes to reach a tender texture, the less the color fades. Cooked in a clay pot, really good shelling beans need nothing more than water and mirepoix to bring out their true flavors. They can be cooked vegetarian (ie: no ham hocks, etc) as the earthenware method proves such great-tasting savory results. Also, if they are a true heirloom variety, chances are they come from a shorter supply chain (probably found at the farmers market directly from the grower), meaning the beans a likely to be a lot fresher than those you find at larger supermarkets.
