Description/Taste
Small, fragile, deep purple distinctively shaped berries with flavor that is intensely sweet, yet with perfectly balanced acidity. The full spectrum of flavor has a wine-like complexity.
Seasons/Availability
Persian Mulberries have a brief but delicious season. The fruit ripens in summer to late summer.
Current Facts
The mulberry tree isn't the most prolific fruit bearer, in part thanks to the birds who love to eat it before it can be picked. The result: often this sought-after, delicious fruit never makes it from behind the scenes at the market. Special customers and liked chefs steal away with a mere few treasured baskets a season.
Applications
Minimalism is best. So good, one should never really consider cooking them, rather eat them fast and straight from the hand or top with fresh whipped cream and spoon up the goodness. It only lasts for so long.
Geography/History
The black mulberry was the first species to be imported to Italy from Persia (present-day Iran). There is an intimate connection between the Mulberry and the silkworm. This insect, the foundation of the silk industry that dates back over 4000 years to China, eats only one thing: the Mulberry.
