Resembling white cauliflower only in shape and size, purple cauliflower offers a flavor similar to broccoli. The purple cauliflower cooks more quickly than white cauliflower.
Geography/History
Locally grown at 2 Peas in a Pod, Arroyo Grande, California, this reputed farm specializes in premium peas and beans and has since 1988. An ideal climate compatible for these two very popular culinary vegetables is credited for superior yields harvested on twenty acres of fertile land. 2 Peas in A Pod Farm discovered that colored cauliflower requires double the moisture in order to catch up in size to white cauliflower. Noticing that colored cauliflower was much smaller in size compared to white cauliflower even when planted at the very same time, this puzzled grower decided to experiment and watered the colored cauliflower throughout the night for one entire week. The colored varieties grew as rapidly as the white cauliflower and the problem of size was solved with the extra moisture.
