Description/Taste
Micro Asian Mallow™ is comprised of small, cordate-shaped leaves attached to narrow and crunchy, pale green to red stems. Each leaf has a uniform, broad, smooth, and flat appearance, showcasing pale green veins spanning across the surface and a small maroon spot where the stem connects to the leaf. The bright green leaves are also delicate and have a pliable feel with a crisp, succulent, and tender consistency. The stems provide a pleasant crunch with a semi-aqueous mouthfeel. Micro Asian Mallow™ has a very mild, spinach to lettuce-like flavor with fresh, vegetal, subtly earthy, and sweet nuances.

Micro Asian Mallow™ is similar in flavor to Chinese mallow, an ancient green that has been incorporated into culinary and medicinal preparations throughout Asia for thousands of years. Unlike the commonality of full-sized Chinese mallow, the tiny microgreens are a proprietary creation developed to embody the essence of mallow in a unique, compact format. Micro Asian Mallow™ captures mallow's mild, vegetal, and subtly earthy flavoring in a sustainable, edible, and visually appealing garnish. Micro Asian Mallow™ can be placed individually on small plates as a procured garnish, or a handful of the greens can be quickly sprinkled across larger preparations for added flavor and textural layers.
Nutritional Value
Micro Asian Mallow™ has not been studied for its nutritional content. Like other microgreens, Micro Asian Mallow™ may provide some vitamin A to maintain healthy organ functioning and vitamin C to strengthen the immune system and reduce inflammation. The microgreens may also contain lower levels of copper, calcium, and iron. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Asian Mallow™ is best used fresh as an edible garnish to showcase the green’s mild, vegetal, and subtly earthy flavor. The microgreens provide increased textural and visual appeal and are traditionally added at the end of cooking as a finishing element to prevent the leaves from wilting. Micro Asian Mallow™ can be tossed into salads, used as a bed of greens for seafood, pressed into dips, topped over crostini, or lightly sprinkled over grain bowls, stir-fries, noodle dishes, and rice dishes. The microgreens can also be layered into sandwiches, piled over soups and stews, blended into sauces such as pesto, or used as a garnish over roasted meat, tempura, egg rolls, sushi, and pasta. Micro Asian Mallow™ pairs well with mushrooms, potatoes, carrots, radishes, cucumbers, tomatoes, asparagus, cauliflower, onions, lemon, meats including pork, beef, and poultry, and seafood such as fish, shrimp, scallops, and crab. The microgreens will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Asian mallow, also known as Chinese mallow, is a primeval crop that was once widely cultivated throughout China as a mild green for culinary and medicinal use. Chinese mallow was famously mentioned in the “Huangdi Neijing,” an ancient Chinese text, roughly translating in English to “The Yellow Emperor’s Classic of Medicine.” Experts believe the famous medicinal piece to be one of the first recorded health texts of Traditional Chinese Medicine, and practitioners still use many of the philosophies documented in the text in the modern-day. The exact date of when Huangdi Neijing was written is heavily debated, with some historians tracing it to around 2600 BCE, while other experts believe it was written around 300 BCE. There is also much consideration surrounding if Emperor Huangdi, the author of the text, was a semi-mythical character or if the text was written by several people over a period of time, masked under the emperor’s name. Chinese mallow is listed as one of the five consumable herbs in the text, along with Welsh onion, pea leaves, allium macrostemon, and garlic chives. Five types of grains, fruits, and animals were also listed within the text as part of a balanced diet. Huangdi Neijing's philosophy is centered around balanced forces, yin and yang, and these forces can be changed using natural elements in conjunction with organs in the body.
