Description/Taste
The Caliope eggplant, a smaller Indian variety(pronounced Cal-I-oh-pee), is also known as Graffiti or zebra eggplant. Sweet-fleshed and teardrop-shaped, the skin is a light, purple-red with white streaks. The skin is thin and does not require peeling before use.

Applications
A smaller variety, the Caliope eggplant may be stuffed, baked, roasted, stewed or grilled. Keep clean, dry and refrigerated until use. Cover or cook slices immediately as they will turn brown when exposed to oxygen.
