Description/Taste
Celery Snowflake Leaf™ is comprised of small to medium leaves arranged along a long, slender stem. The leaves are triangular, flat, and deeply toothed, divided into three sections with multiple leaves growing along the tops of the stems. The leaves also have a pale green hue with a white or blushed pink frosted edging. Celery Snowflake Leaf™ has a fresh and grassy scent and strong pepper taste with grassy and herbaceous undertones.

Celery Snowflake Leaf™ is developed from leaf celery, botanically classified as Apium graveolens secalinum, an herbaceous variety of celery grown for its fresh leaves and seeds as opposed to its stems like other celery varieties. Leaf celery is also known as cutting celery and soup celery. Celery Snowflake Leaf™ is a part of a boutique line of specialty greens developed by Fresh Origins Farm in San Marcos, California. The plants are grown year-round and in-house in sprawling, sustainably-minded greenhouses. The leaves are designed to enhance the visual presentation of various dishes while also adding a bright and intense celery flavor and aroma.
Nutritional Value
Celery Snowflake Leaf™ contains high levels of calcium, a mineral that aids in the development of healthy bones and contributes to nerve health and muscle function. The leaves also contain moderate amounts of vitamins, including vitamin K, used in the body to produce blood-clotting proteins and building bones, vitamin A, a nutrient that supports vision, cell division, and reproduction, and vitamin C, an antioxidant that aids immune system functioning. Celery Snowflake Leaf™ also contains soluble and insoluble dietary fiber and minerals like potassium and manganese.

In addition to its aesthetic appeal, Celery Snowflake Leaf™ contributes a grassy, peppery flavoring when mixed into potato dishes, grilled vegetables, coleslaws, salads, and side dishes such as tabbouleh. The greens can also be blended into smoothies and dips as a refreshing addition. Celery Snowflake Leaf™ pairs well with herbs such as bay leaves, thyme, tarragon, chervil, and chives, aromatics including garlic and onions, meats such as pork, beef, poultry, turkey, and lamb, and seafood including shrimp, white fish, lobster, clams, and crab. Petite® Greens will generally keep up to seven days when stored unwashed, dry, and in a container in the refrigerator. Mirepoix is the base of many recipes in French cuisine and is made by combining two parts onions, one part carrot, and one part celery. This combination, developed in the 18th century by French aristocrat Duke Charles-Pierre Gaston Francois de Levis, Duc de Levis-Mirepoix is slowly cooked over low heat in butter to release the vegetable’s naturally sweet juices and aroma, creating a rich and savory flavor. This combination is often strained and removed from the final product, but it can be left in to add extra thickness and dimension to pureed soups and hearty soups.
