Peaches are botanically classified as Prunus Persica, and are a stone fruit species alongside cherries, apricots, nectarines and plums. There are hundreds of varieties of peaches, and are either yellow fleshed or white-fleshed. Most yellow-fleshed peaches are clingstone varieties while white-fleshed peaches fall into the freestone category. The greatest difference between the two is really about texture and taste. Clingstone varieties tend to lean on the side of extremely juicy and flavor forward making them very suitable for baking, drying and canning while freestone varieties are generally less succulent and thus chosen for fresh eating.
