Description/Taste
Upland Cress has a delicate structure with petite, geometrically shaped lime green leaves and razor thin stems. Upland Cress is spicy and peppery and becomes even more pungent, often acrid and less succulent with maturity. Maturing plants will produce fragrant yellow flowers with the same delicate texture and overt flavors. The entire plant is edible and usually used raw due to its subtle texture.

Cress is a general name for a group of sharply flavored greens indigenous to Europe that are used in salads and as potherbs. Upland watercress is botanically classified as Barbarea verna, and also commonly referred to as land cress, American cress and Early yellowrocket. It a biennial herb that should not be confused with watercress or pepper grass as it is milder and more delicate.
