Description/Taste
Micro Cress Water is a small, delicate green, averaging 1 to 2 centimeters in diameter, and is comprised of 1 or 2 circular leaves attached to a slender stem. The bright green leaves are thin, smooth, broad, and flat with uniform, curved edges. The leaves are also connected to a sturdy but flexible green stem, contributing to the green’s crisp, succulent, and tender consistency. Micro Cress Water has a sharp, peppery flavor with subtle, bitter-sweet notes. When consumed, the piquant flavors immediately descend onto the palate, similar to the pungent notes found in horseradish, but the bold taste dissipates quickly, leaving a clean, vegetal flavor mixed with a light citrus-like undertone.
Seasons/Availability
Micro Cress Water is available year-round.
Current Facts
Micro Cress Water consists of young, edible seedlings that are a part of a line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The delicate, crisp greens are a modern twist on the popular mature herb watercress, belonging to the Brassicaceae or mustard family. Micro Cress Water is grown by Fresh Origins Farm to provide chefs with a unique, edible garnish containing a piquant, peppery flavor. The greens are generally harvested 1 to 2 weeks after sowing, and chefs use the greens as an accent in savory dishes, especially seafood. Micro Cress Water can be sprinkled across preparations for substantial visual impact, or individual leaves can be strategically placed on a dish to evoke a more delicate, artistic nature. In addition to being featured as a microgreen, Micro Cress Water is also offered as Petite® Watercress, a slightly larger, more mature version of the microgreen.
Nutritional Value
Micro Cress Water is a good source of calcium to strengthen bones and iron to produce proteins to carry oxygen within the bloodstream. The greens also contain vitamins A and C, antioxidants that reduce inflammation and provide smaller amounts of vitamin K, potassium, folate, and vitamin E. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Applications
Micro Cress Water is best suited as an edible garnish for savory preparations, and the tender, crisp greens are showcased when consumed fresh, added at the end of applications to avoid wilting. The peppery microgreens can be incorporated into salads, used as a garnish over seafood, or layered into sandwiches for a sharp bite. Micro Cress Water can also be floated on top of soups, blended into sauces such as pesto, mixed into pasta, or served over roasted meats. The subtly bitter, grassy notes of Micro Cress Water complement a wide variety of dishes in Asian and Latin cuisine, and the greens combine well with other herbs such as mint, lemongrass, and basil. Micro Cress Water can also be used as a substitute for black pepper as a unique flavor twist. Micro Cress Water pairs well with seafood such as halibut, scallops, seabass, crab, shrimp, and salmon, meats such as poultry, beef, prosciutto, and duck, cheeses such as mozzarella, feta, parmesan, and goat, squash, and dark leafy greens. Micro Cress Water will generally keep 5 to 7 days stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Micro Cress Water is the young version of watercress, one of the most popular varieties of edible cresses used in culinary applications. Throughout history, the pungent herb was widely used across all social classes within Victorian Europe, and it was especially loved among the British upper-class, where the greens were used as edible garnishes, in salads, and as a sandwich and soup ingredient. Watercress was also layered into England’s famous egg sandwiches for high tea, which was a traditional afternoon gathering filled with bite-sized sandwiches, cakes, toast, and tea. High tea was first created in the mid-1800s as a snack between lunch and dinner, and as the snack increased in popularity, it quickly transformed into a favored social gathering. The mid-afternoon get-together earned its name from the tradition of standing or sitting on high stools during the meal. High tea is still practiced in the modern-day and has also expanded to restaurants and homes in the United States. Chefs use Micro Cress Water as a tender, modern alternative to mature watercress in high tea sandwiches, and the tiny greens are also an aesthetically pleasing garnish over other bite-sized foods.
