Fresh Origins® Pea Tendrils are long and slender, measuring approximately 8 to 12 centimeters in length. They are comprised of thin, hollow stems with incredibly delicate and spindly tendrils branching from the sides and tip. These tendrils can either be straight or curved, creating whimsical patterns that intertwine with each other. Pea Tendrils have a soft and succulent texture with a crisp and slightly crunch consistency. The tendrils contain green and nutty flavors with a mild sweetness and faint minerality, giving the stems a refreshing and vegetal quality.

Fresh Origins® Pea Tendrils are part of a specialty line of boutique leaves developed by Fresh Origins Farm, located in San Marcos, California. Pea tendrils grow on sugar snap, snow, and shelling varieties of peas, a plant belonging to the Fabaceae family. These curling stems are sent out from the young vines of the plant and are used to help the plant climb fences, trellises, and other larger bushes and trees. Pea Tendrils are typically harvested at the beginning of the plant’s life cycle before the pod develops in order to ensure a tender texture. Fresh Origins® harvests these delicate, whimsical stems from their pea green plants. The product is designed to be a visually appealing garnish with a robust pea flavor, offering a more fanciful appearance than traditional pea greens.
Nutritional Value
Fresh Origins® Pea Tendrils are a significant source of vitamins and minerals, including vitamin A and C, two vitamins that support the body’s immune system, and vitamin K, a vitamin necessary for blood clotting and bone health. The greens are also a good source of manganese which helps balance hormones, potassium to support hydration, calcium for bone health, and zinc, a mineral that supports the body’s immune system and metabolism.
Applications
Fresh Origins® Pea Tendrils are best suited as a fresh, edible garnish as the delicate greens cannot withstand high heat and should be added at the end of cooking or plating to prevent the stems from wilting. Pea Tendrils can be floated atop soups, mixed into salads featuring light vinaigrettes, or served in sandwiches and wraps. The visually appealing stems can be served atop grilled fish, chicken, or steak, or they can be used to accent dishes featuring spring vegetables like morels, fresh peas, green garlic, and asparagus. Pea Tendrils pair well with soft cheeses such as goat, feta, or Boursin, aromatics including garlic, onions, and fresh herbs, and vegetables like fava beans, radishes, mushrooms, lemon, and green beans. Fresh Origins® Pea Tendrils will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.

Pea Tendrils are considered an agricultural by-product or secondary product. These are products that are created during the harvest or manufacture of a primary crop. The term “secondary products” was first used by Andrew Sherratt, and English archeologist, in 1981 to define products derived from animals other than the meat consumed from them. This term has grown to include not only animal products but agriculture products as well. Many of these items are used in the production of oils, feeds, and compost but in the late 20th century, a growing interest in local farming and farmers markets, pushed farmers to engage in more sustainable farming practices than commonly found in commercial farming. In traditional farming, pea plants are grown for their pods, but farmers found that culling some of the tender greens of the plant before the pods emerged created a stronger plant and a secondary crop that could be sold during the early spring season. At Fresh Origins®, Pea Tendrils are harvested as their micro and Petite® pea greens mature, creating a secondary product with a unique and magical appearance.
Geography/History
Peas are descended from a wild pea variety that is native to the Mediterranean region. The legumes are one of the oldest cultivated crops, with archeological evidence of the plant dating back over 5,000 years to the Bronze Age. The peas did not gain popularity as a cultivated crop until the 16th century. Today, Peas have naturalized worldwide and are widely used in many different cultures including Europe, Asia, the Middle East, and America. Fresh Origins® Pea Tendrils are grown and harvested in Northern San Diego County at Fresh Origins® Farm. The farm specializes in growing a diverse catalog of specialty greens and flowers, year-round, in the temperate Southern California climate. Fresh Origins® is a certified member of the California Leafy Greens Marketing Agreement, which follows science-based food safety practices promoting transparency and honesty in farming. Today, Fresh Origins® Pea tendrils can be found through select distribution partners of the farm across the United States and Canada.
