Micro Shiso Mix is a blend of red and green shiso, with each microgreen bearing 1 to 2 small leaves connected to a slender stem, averaging less than 2 to 3 centimeters in length. The oval leaves are broad, flat, and lightly fuzzy with curved, smooth to lightly serrated edges. The leaves also vary in color from dark green to green, tinged with a deep red, burgundy hue. Micro Shiso Mix has a soft, crisp, succulent, and tender consistency. Within the mix, the aromatic combination of red and green shiso combines to create an earthy, herbal, and sweet flavor with delicate notes of basil, cinnamon, fennel, mint, clove, and anise.

Shiso is part of the Lamiaceae or mint family and is native to Eastern Asia, cultivated since ancient times. The fragrant leaves were introduced to Japan between the 8th and 9th centuries, where they became a staple flavoring for sushi and other seafood. Shiso was also introduced to the Western world in the 1800s, but it wasn’t until the early 21st century that the mint relative became widely accepted among western chefs. In the modern-day, shiso has become especially popular for its unique, herbal taste and is a trending ingredient in mixology and desserts. Pastry chefs across America incorporate the aromatic leaves as flavoring into ice cream, jellies, and fruit-based desserts. The leaves are also being dried and ground into sugar, utilized as a sweet topping, or mixed and baked into macarons for a fresh, savory flavor.
