Description/Taste
Petite® Celery is small to medium in size, averaging 7-10 centimeters in length, and has deeply lobed, flat leaves with short, slender stems. The bright green leaves are pliable and smooth with serrated edges, and the thin stems are crisp and a matching vibrant green. Petite® Celery is tender, slightly chewy, and has a concentrated earthy, green, salty-sweet flavor with a mild bitter note balanced by a clean, peppery bite.

Petite® Celery is an early harvest of the mature herb and is a part of a trademarked line of specialty greens grown by Fresh Origins Farm in San Diego, California. Petite® Celery matures in approximately 4-6 weeks after sowing, and these greens have the distinct peppery note of the mature celery stalk without being overpowering. Petite® Celery can be used as a garnish in a variety of culinary dishes and will add visual appeal, flavor, and a tender texture.

Applications
Petite® Celery greens are best suited for raw applications as their fresh, green flavor is used as a garnish to accent dishes such as soups, stews, stir-fries, pasta, and salads. They are also commonly used in turkey, chicken, and tuna sandwiches, deviled eggs, and used as a garnish for cocktails such as a Bloody Mary. Petite® Celery pairs well with fish such as halibut or tuna, crab, parsley, tarragon, chervil, chives, sage, bacon, cheese, lemon, hard-boiled eggs, potatoes, carrots, parsnips, and onion. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.

Geography/History
Celery is believed to be native to the Mediterranean region, but some varieties have also been found in Asia Minor and South America and have been cultivated for thousands of years. Petite® Celery was created at Fresh Origins Farm in San Diego, California in the 1990s-2000s and today it can be found through select partners of Fresh Origins, such as Specialty Produce, and are available across the United States.
