Current Facts
Petite® Herb Mix™ is a part of a boutique line of specialty greens produced by Fresh Origins Farm in San Marcos, California, known as Petite® Greens. These greens are more mature than microgreens, harvested approximately 4 to 6 weeks after sowing, but they are gathered before they are fully mature, resulting in small, tender leaves with a robust flavor. The herbaceous mix is a modern interpretation of the traditional herbs that are the foundation of flavor building in cooking, including onion, mint, basil, anise, oregano, thyme, and many others. Harvested with peak flavor, this mix creates an intense yet balanced flavor profile that can build complexity within a dish. Fresh Origins grows over 125 varieties of Petite® Greens year-round and in-house in sprawling, sustainably-minded greenhouses. Chefs value Petite® Herb Mix™ for its complex flavor profile and beautiful array of colors, shapes, and textures.
Nutritional Value
Petite® Herb Mix™ provides a variety of vitamins and minerals due to the combination of multiple herbs with unique nutritional properties. The greens are a significant source of vitamin C, an antioxidant that aids the body’s immune system, as well as vitamin b6, vitamin A, and vitamin K. The mixture also contains iron, potassium, calcium, magnesium, folic acid, and zinc, all minerals that support various systems within the body. The nutritional value of the herb blend is contained primarily within the leaves and is significantly impacted by growing conditions.
Applications
The unique flavor profile and stunning presentation of Petite® Herb Mix™ makes it ideal as a garnish, fresh bed for grilled meats or vegetables, or mixed into salads for added flavor and texture. The delicate greens cannot withstand high heat and should be added at the end of the cooking process or during plating to prevent the leaves from wilting. The greens can be lightly dressed and served in salads or layered into wraps, sandwiches, and burgers. They can also be sprinkled over pasta and pizza, stirred into grain dishes, or served with cured meats like smoked salmon and charcuterie. Petite® Herb Mix™ pairs well with meats such as pork, poultry, turkey, and steak, fish, crustaceans, fruits such as pears, watermelon, and apples, maple syrup, and edible flowers such as marigolds. Petite® Herb Mix™ will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
Petite® Herb Mix™ allows chefs to combine two important elements within a dish: the layering of complex flavors and garnishing. Fresh herbs have been used for thousands of years to add flavor, texture, and fragrance to recipes across many different European, Asian, and Latin cuisines. Aromatic herbs create an enticing aroma and complex flavor within a dish. With the increased popularity of visual presentation of dishes in restaurants, catering, and at home, garnishing has become an art form in the culinary world. Garnishes serve as an accent, matching and enhancing the dish's flavor while adding stunning visuals and fragrance to the final plating. Petite® Herb Mix™ provides chefs with a mix of colors, shapes, and textures with classic flavors that pair with a large variety of ingredients.
