Description/Taste
Petite® Lucky Shamrock Mix™ is comprised of leaflets, measuring 4 to 6 cm in size, each containing 3 to 5 obovate shaped leaves with finely toothed edges and deep pinnate veining. The leaves range in color from bright green and dark purple to blends of both purple and green, with striking burgundy, white, and green brush-stroke patterns emerging from the center of each leaf. Petite® Lucky Shamrock Mix™ has a sweet and earthy aroma with vanilla nuances and an earthy and vegetal flavor with a bitter finish.

Petite® Lucky Shamrock Mix™ is a part of a boutique line of specialty greens developed by Fresh Origins Farm, a sustainably focused operation in southern California. Petite® Greens are more mature than microgreens but are harvested before they have fully developed, gathered approximately 4 to 6 weeks after sowing, resulting in small, tender leaves with full flavor. Fresh Origins currently grows over 125 varieties of Petite® Greens with chefs in mind. Petite® Lucky Shamrock Mix™ is derived from mixtures of wild clover, a perennial species in the pea family. Clover sprouts naturally in three leaflets, but they can also mutate into leaflets of four, which are considered lucky. Clover is entirely edible and is often used as livestock feed and to produce clover honey. The shamrock is also the symbol of the St. Patrick’s Day holiday, and the stunning appearance and delicate texture of Petite® Lucky Shamrock Mix™ is a popular garnishing choice during the holiday’s celebration.

The shamrock, whose name is derived from the Gaelic word “seamrog,” meaning “little clover,” is the symbol of St. Patrick’s Day, an Irish Catholic holiday. Legend says that when Saint Patrick arrived in Ireland, he used a three-leaf white clover to explain the Christian concept of the Holy Trinity, with the three leaves representing the Father, Son, and Holy Spirit. A traditional shamrock has only three leaves, but four-leaf clovers grew to symbolize luck over time. Four-leaf clovers are an anomaly that only occurs once in every ten thousand leaf sets, and plants that produce a leaflet of four are more likely to sprout more four-leaf clovers. This has allowed commercial cultivators to select plants that are more likely to mutate. St. Patrick’s Day, also referred to as St. Patty’s Day, has become a popular celebration in Europe and the United States with “shamrock” themed entrees, desserts, and cocktails showing up on menus throughout February and March.
