Description/Taste
Petite® Pea Greens™ are small, delicate leaf pairs attached to slender stems, averaging two centimeters in diameter, and have a uniform, oval shape that tapers to a point at the stem end. The twin leaflet groupings are bright green, smooth, and thin with a crisp and succulent texture and often have a delicately curled tendril emerging from the center. Petite® Pea Greens™ have a mild and pleasant vegetal flavor with a subtle nuttiness and sweet, herbal, and bright grassy notes.

Petite® Pea Greens™ are a part of a specialty line of boutique greens developed by Fresh Origins Farm, a sustainably focused operation located in San Marcos, California. Petite® Greens are more mature than microgreens but are harvested before they have fully grown, approximately 4 to 6 weeks after sowing, resulting in small, tender leaves with full flavor. Pea greens are the edible leaves, stems, and tendrils of the pea plant, belonging to the Fabaceae family. Commonly the young, tender shoots of the sugar and snap pea varieties are used for pea greens, but English pea greens can also be eaten when young. Fresh Origins currently grows over 125 varieties of Petite® Greens developed with chefs in mind. The delicate Petite® Pea Greens™ have become a favored choice of chefs due to their beautiful appearance and sweet and nutty flavor.

Petite® Pea Greens™ are a significant source of vitamins and minerals, including vitamin A, vitamin C, and vitamin K, a vitamin necessary for blood clotting and bone health. Applications
Petite® Pea Greens™ are best used as a fresh, edible garnish or as a subtly sweet flavoring to dishes. Though somewhat fragile, Petite® Greens have a heartier texture than microgreens, allowing them to better withstand dressings and vinaigrettes. The greens can be floated atop soups, mixed into salads, or served in sandwiches and wraps. The delicate leaves can be served atop fish, chicken, or dishes featuring spring vegetables like morel mushrooms, sweet peas, green garlic, and asparagus. Pea greens are also traditionally used in Asian cuisine and are added to stir-fries. Petite® Pea Greens™ pair well with cheeses such as goat, feta, parmesan, and pecorino, aromatics such as garlic, ginger, leeks, and shallots, fava beans, mushrooms, radishes, citrus, eggs, seafood, and poultry. Petite® Pea Greens™ will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.

Pea greens are known as Dou Miao in Mandarin and are a delicacy in Chinese cuisine. The young and tender leaves, stems, and tendrils of the snow pea plant are harvested before and after the pea season for peak flavor. The greens are most commonly stir-fried with aromatics like garlic, ginger, and chiles just until they wilt to enhance their sweet and nutty flavor. The dish can usually be found on traditional Chinese menus but are often left off the English translation of the menu.
