Current Facts
Petite® Sweet Spice Mix™ is a part of a boutique line of specialty greens developed by Fresh Origins Farm in San Marcos, California, known as Petite® Greens. These greens are more mature than microgreens, harvested approximately 4 to 6 weeks after sowing, but they are gathered before the greens are fully grown, resulting in small, tender leaves with a robust flavor. Petite® Sweet Spice Mix™ combines varieties of mint, anise, and basil to showcase the warm spice flavors commonly enjoyed during the winter months and in Middle Eastern and Asian cuisine. Fresh Origins currently grows over 125 varieties of Petite® Greens year-round in sprawling, sustainably-minded greenhouses. Petite® Sweet Spice Mix ™ is a popular choice for chefs due to its beautiful appearance and sweet, spicy, warm flavor and aroma.
Nutritional Value
Petite® Sweet Spice Mix™ provides multiple vitamins and minerals due to the combination of herbs with unique nutritional properties. The greens are a source of vitamin C, an antioxidant that strengthens the immune system, boosts collagen, and reduces inflammation. The blend also contains some beta-carotene, a nutrient converted into vitamin A in the body to maintain healthy organs, and provides lower amounts of magnesium to regulate blood pressure. The mix is also a source of vitamin K, a nutrient that assists in faster wound healing, and is a good source of iron to build the protein hemoglobin to transport oxygen through the blood.
Applications
Petite® Sweet Spice Mix™ was created to have tender leaves suitable as a garnish, in salads, or as a fresh bed for grilled meats and vegetables. The crisp greens are showcased best when consumed fresh, and the mix should be added at the end of preparations to avoid wilting. The blend can be used to garnish traditional Chinese, Middle Eastern, and Indian dishes that feature warm spices like cinnamon, anise, cardamom, clove, and nutmeg, or to top European and American desserts also featuring these warm spices. Petite® Sweet Spice Mix™ can be floated atop creamy soups, folded into salads, and mixed into fruit. The herb mix can be used to add a sweet and spicy flavor to ice creams, sorbets, tarts, pies, and decorated cakes, or it can be mixed into cocktails, fruit punch, and sparkling beverages. Petite® Sweet Spice Mix™ pairs well with fruits such as apples, pears, persimmons, vegetables like hard squash, tomatoes, cauliflower, and hearty greens, meats including poultry, lamb, and turkey, shrimp, chocolate, vanilla, and herbs such as sage, rosemary, and thyme. The herb mix will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
Ethnic/Cultural Info
The word dessert was first introduced in the seventeenth century and is derived from the French verb “desservi,” meaning “to clear the table.” Etiquette dictated that napkins and tablecloths be changed before the final course, which usually consisted of fresh fruit. This final course evolved over time to include cookies, marzipan, meringues, and other frozen desserts and was often served on ornate sugar sculptures or elaborate metal and glass structures. At the time, this decadent final course was enjoyed solely by the elite of French society, but by the 19th century, trade and technological advances led to more affordable pastries and confections, making dessert something that the middle and working classes could also enjoy. For many people today, it's not a complete meal without a dessert course, and in fine dining, this course is used to showcase beautiful and intricate sweets. With the addition of micro and Petite® Greens, like Petite® Sweet Spice Mix™, this course can elevate the dining experience, adding fragrance, texture, color, and flavor to the final plating.
