Use Red Romance Mache mix as a fresh, simply dressed salad. The combination of leaves need very little to no manipulation to showcase their best attributes: color, texture and flavor. Simple accessory ingredients include light bodied and creamy dressings, fresh and aged cheeses, apples, berries, stone fruit and persimmons, herbs including basil, mint and tarragon, garlic, shallots, bacon, nuts, dried fruit and citrus. Geography/History
The Red Romance greens set themselves apart from other mache varieties grown in the United States. Most mache is cultivated in greenhouse's due to its fragility and the fact that it grows so low to the ground, which creates a host of obstacles from growing to harvesting. Red Romance greens are field grown and carefully cultivated in Salinas Valley, California. Red Romance is the product of horticulturist and agricultural innovator, Todd Koons. In addition to pioneering the Mache trend in America, his Epic Roots brand grows baby lettuces and baby herbs to create a premium market for lesser known European lettuce varieties, such as Lollo Rosso and Mache rosettes.
