Description/Taste
Red Kaiware sprouts consist of thin, white to pale purple stems capped with two small dark green leaves. The stems are long, slender, and pliable, bearing a crisp, succulent, and slightly aqueous consistency and the leaves have a cordate, curved shape with a flat, smooth, and delicate nature. There are several varieties of Kaiware sprouts that are often sold with their white roots intact, and the brown, round to oval seed shells are usually found between the roots. Red Kaiware sprouts have a refreshing green, grassy, and semi-sweet flavor combined with pungent, peppery notes.

Applications
Versatile, these flavor-packed sprouts enhance chicken, potatoes, hamburgers, shrimp, raw or cooked fish, noodles, eggs or lamb. Float on clear soup, fold in omelets, snip on dips, enhance egg salad or tuck between buttered bread. Add the last minute of cooking to protect flavor and texture. Ideal substitute for watercress and parsley. Perfect tasty bed for grilled fish and roasted meat entrées. Stuff in pita bread sandwiches. Packed very clean, snip from the roots. If bagged, fluff and untangle. Perk up limp sprouts in ice water about ten minutes; drain; dry thoroughly, re-wrap and chill. To store, always keep sprouts refrigerated.
