Fresh Green peanuts are botanically known as Arachis hypogaea and are classified as a summer legume, not a nut. Peanuts are believed to have originated in South America before spreading throughout the globe through explorers and spice trading. Peanuts begin by being planted underground, produce slender green stems and leaves, then produce green pegs that grow back toward, and eventually back underground. When it is time to harvest, entire plant is dug up and typically one will find about 20 peanuts on each plant.
