Micro Kinome leaves are small in size and are ovate to elliptic in shape with serrated edges tapering to a small point on the non-stem end. The vibrant green leaves are pinnately arranged and grow close together along the slender, light green stem, and have a waxy, shiny appearance on the surface. Micro Kinome leaves are fragrant with a light, citrus aroma and are crisp and tender with a fresh green, minty, and peppery taste with notes of lime and a mild, lingering heat.

Micro Kinome are young, edible leaves that are a part of a line of specialty greens grown by Fresh Origins Farm, the leading national producer of both common and unique microgreens, located in San Diego, California. Harvested approximately 14-25 days after sowing, Micro Kinome leaves are cultivated in greenhouses that allow for natural sunlight and continuous air circulation, which is an ideal climate for optimum growth and year-round production. Micro Kinome leaves are commonly used fresh as a garnish to add bright, peppery flavors and a crisp, tender texture to culinary dishes.
Micro Kinome leaves contain some iron, calcium, manganese, and vitamin C.
Micro Kinome leaves are best suited for raw applications as their delicate nature and flavor are showcased when used fresh as a garnish. The leaves are popularly used to garnish tartars, soups, grilled fish, salads, rice, and stir-fries. The leaves can also be ground with miso into a paste that is similar to pesto and tossed with meat and vegetables. Micro Kinome leaves pair well with teriyaki dishes, fried chicken, sashimi, ahi tuna, clams, squid, miso, pickled ramps, bamboo shoots, lemon aioli, and ramen. The greens will keep 5-7 days when stored unwashed, in a sealed container, and in the refrigerator.
