Micro Bull’s Blood is a slender green comprised of 1 to 2 elongated, oval leaves, averaging 5 to 7 centimeters in length, that taper slightly to a blunt, curved tip and are connected to a thin stem. The bright green leaves are smooth, flat, pliable, and uniform, bearing a prominent dark red to magenta midrib with the undersides of the leaves sometimes blushed with red. The leaves are also attached to a narrow, crimson stem, contributing to the microgreen’s crisp, succulent, and tender consistency. Micro Bull’s Blood has a delicate texture with a mild, sweet, subtly nutty, and earthy, beet-like flavor.

Micro Bull’s Blood consists of young, edible seedlings that are a part of a line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The delicate microgreens are a modern, compact version of the famous Bull’s Blood beet developed in the mid 19th century. Bull’s Blood beets were initially cultivated for their edible leaves, and Micro Bull’s Blood captures the essence and flavor of the full-grown leaves in an aesthetically attractive, tiny green. Micro Bull’s Blood was specially curated to provide chefs with a unique, edible garnish that contributes clean flavors, textures, and unusual shapes to culinary dishes. They were also one of the first microgreen varieties ever grown for chefs. Microgreens are generally harvested 1 to 2 weeks after sowing and are gathered at the peak of their growth cycle to ensure optimum flavor and nutritional properties. Micro Bull’s Blood elevates the dining experience by adding subtle earthy flavors without overpowering the dish's main elements. In addition to being featured as a microgreen, Micro Bull’s Blood is also offered as a Petite® Green, a slightly larger, more mature version of the microgreen.
Micro Bull’s Blood is a source of vitamin C, an antioxidant that strengthens the immune system, vitamin A to maintain healthy organ functioning, and vitamin K to assist with faster wound healing. The microgreens also provide copper, magnesium, potassium, calcium, and lower amounts of phosphorus, zinc, and folate.
Micro Bull’s Blood is best suited as an edible garnish and provides a sweet and earthy flavor suitable for a wide variety of culinary dishes. The tender greens should be added at the end of preparations to avoid wilting and can be tossed into green salads, mixed into grain bowls, layered into sandwiches, used as a topping over pizza, or floated on soups, stews, and curries. Micro Bull’s Blood can also be used as a garnish for egg-based dishes, including omelets and quiche, stirred into creamy pasta dishes, topped over avocado toast, sprinkled over tacos, or incorporated into stir-fries. Like the famous beetroot, Micro Bull’s Blood shares a similar but milder flavor profile and can be used to further accentuate beet flavors in any dish calling for Bull’s Blood beets. Micro Bull’s Blood pairs well with aromatics such as chives, shallots, garlic, and ginger, cheeses such as feta, burrata, and goat, chickpeas, quinoa, nuts such as walnuts, pine nuts, and pecans, root vegetables, including carrots and radishes, pomegranate, papaya, citrus, mushrooms, and butternut squash. The microgreens will generally keep 5 to 7 days when stored unwashed, in a sealed container, and in the refrigerator. It is recommended to use these greens immediately for the best quality and flavor.
