Micro Bull’s Blood is a slender green comprised of 1 to 2 elongated, oval leaves, averaging 5 to 7 centimeters in length, that taper slightly to a blunt, curved tip and are connected to a thin stem. The bright green leaves are smooth, flat, pliable, and uniform, bearing a prominent dark red to magenta midrib with the undersides of the leaves sometimes blushed with red. The leaves are also attached to a narrow, crimson stem, contributing to the microgreen’s crisp, succulent, and tender consistency. Micro Bull’s Blood has a delicate texture with a mild, sweet, subtly nutty, and earthy, beet-like flavor.

The delicate microgreens are a modern, compact version of the famous Bull’s Blood beet developed in the mid 19th century. Bull’s Blood beets were initially cultivated for their edible leaves, and Micro Bull’s Blood captures the essence and flavor of the full-grown leaves in an aesthetically attractive, tiny green. Micro Bull’s Blood was specially curated to provide chefs with a unique, edible garnish that contributes clean flavors, textures, and unusual shapes to culinary dishes. They were also one of the first microgreen varieties ever grown for chefs. Microgreens are generally harvested 1 to 2 weeks after sowing and are gathered at the peak of their growth cycle to ensure optimum flavor and nutritional properties. Micro Bull’s Blood elevates the dining experience by adding subtle earthy flavors without overpowering the dish's main elements. In addition to being featured as a microgreen, Micro Bull’s Blood is also offered as a Petite® Green, a slightly larger, more mature version of the microgreen.
