Micro Carrot Fern Leaf™ is comprised of several small and slender leaves attached to a narrow stem. Each leaf has a slightly curved, twisted, and curled appearance, contributing to the green's frilly, fern-like nature. The bright green leaves are long and cylindrical, tapering to a point at the tip, and have a smooth, pliable, and delicate feel. Micro Carrot Fern Leaf™ has a crisp and refreshing, succulent mouthfeel with a tender consistency. The microgreens also contain concentrated herbal, earthy, and vegetal flavors with mild and peppery, parsley, and carrot-like nuances.
Micro Carrot Fern Leaf™ is available year-round.
Micro Carrot Fern Leaf™ consists of young, edible seedlings that are a part of a trademarked line of specialty microgreens grown by Fresh Origins Farm in San Diego, California. The slender, crisp leaves are an innovative, proprietary creation developed for chefs to reimagine the way carrot greens are traditionally used in culinary preparations. Micro Carrot Fern Leaf™ contains a concentrated, more robust, and herbaceous flavor compared to regular micro carrot tops. The microgreens also encourage chefs to push the boundaries of flavor, texture, and appearances in their menus using the elevated garnish. Micro Carrot Fern Leaf™ can be placed individually on small plates as a procured garnish, or a handful of the microgreens can be quickly sprinkled across larger preparations for added flavor and textural layers.
Micro Carrot Fern Leaf™ is a source of vitamin C to strengthen the immune system, protect against free radical damage, and reduce inflammation. The microgreens also contain potassium to balance fluid levels within the body, calcium to protect bones and teeth, and lower amounts of fiber and iron. It is important to note that the vitamins and minerals are found primarily within the leaves and not in the stems of the microgreens. Growing conditions also significantly impact the nutritional content, and Fresh Origins cultivates their microgreens in a natural setting, an ideal climate for healthy, optimal greens.
Micro Carrot Fern Leaf™ is best used fresh as an edible garnish to showcase the green’s earthy, herbal flavor. The microgreens provide increased textural and visual appeal and are traditionally added at the end of cooking as a finishing element to prevent the leaves from wilting. Micro Carrot Fern Leaf™ can be added as an edible garnish to grain bowls, salads, and pasta, or it can be layered into sandwiches. The microgreens can also be floated over soups, mixed into dips, hummus, pesto, and chimichurri sauces, chopped into salsa, or blended into smoothies for a refreshing, herbal flavor. Micro Carrot Fern Leaf™ provides a combination of fresh green flavors that can be used as an herb or salad green. The microgreens provide added flavoring for roasted meats and vegetables, can be placed as a garnish over vegetarian burgers, or utilized as a topping over bite-sized appetizers. The greens can also be floated in cocktails for an unusual twist of the classic mixology garnish. Micro Carrot Fern Leaf™ pairs well with meats such as poultry, turkey, and fish, other seafood, root vegetables including radishes, beets, potatoes, and carrots, herbs such as mint, parsley, and tarragon, garlic, scallions, mushrooms, cucumbers, corn, and tomatoes. The microgreens will generally keep 5 to 7 days when stored in the refrigerator in a sealed container.
Micro Carrot Fern Leaf™ is a modern-day garnish favored by chefs for its delicate aesthetic and frilly, lightweight appearance. The slender microgreens are a twist on classic carrot foliage, which was historically a choice fashion statement for London residents. Carrots were widely grown in home gardens throughout London during the Elizabethan period in 1533, and the roots were also sown in commercial market gardens as an everyday vegetable. Both the roots and the carrot tops were considered commercially relevant crops. After the Elizabethan period, the city of London lived under the reign of King James the 1st, and carrot tops transformed from an edible ingredient to a choice fashion statement. Fruits, leaves, feathers, and flowers all became staples in decorative fashion. The frilly carrot greens resembled bird feathers, and many ladies of the English court would fasten the greens to their hats, onto their clothing, or pin the leaves into their hair. The leaves were favored as a visually unique alternative to feathers and were believed to contribute an air of natural elegance. Carrot tops were also sometimes left with a small piece of the root attached to allow for resprouting in English homes. John Parkinson, a well-known English botanist and herbalist to King James the 1st, recorded the use of greens in women’s fashion. He also noted that carrot tops with shades of red were the most desirable as they were seasonal and more challenging to obtain than solid green tops.
