Petite® Sea Grass™ is small in size and has thin, curving, needle-like leaves. The slender, smooth leaves are a vibrant green and are tender and pliable. Petite® Sea Grass™ has a natural, salty flavor, which stems from the salinity developed because of its affinity for growing near the seashore, similarly to sea beans and other maritime plants. Its texture is distinctly succulent and crunchy with a pleasant briny minerality and tart grassy notes. Petite® Sea Grass™ is often compared to agretti, a naturally salty grass-like green that is native to Italy and shares a similar flavor of spinach without the oxalic acid.

Petite® Sea Grass™ greens are best suited for raw applications as the crunchy texture, and salty flavor cannot withstand high heat. It can also be mixed with other succulents or Petite® Greens such as Petite® Iceplant™, Petite® Sea Beans™, Petite® Verdolaga, and Petite® New Zealand Spinach to create a salty, citrus bed of greens for seafood. Petite® Sea Grass™ greens also pair well with lemon, garlic, olive oil, aged hard cheeses, cream, butter lettuce, mustard greens, nuts such as hazelnuts and pine nuts, tomatoes, peppers both mild and hot, earthy forest mushrooms, shellfish, and other fish such as ahi, albacore, sea bass, and sardines. They will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
