There is also a central, semi-prominent light green vein that branches into a few smaller veins across the surface. Petite® Watercress Pink Ice™ is delicate and tender with a light crunch and has a fresh, peppery flavor.
Petite® Watercress Pink Ice™ is available year-round.
Petite® Watercress Pink Ice™ are uniquely colored, young, edible greens that are a part of a trademarked line of specialty plants grown by Fresh Origins Farm in San Diego, California. Designed to be slightly larger than microgreens with a stronger flavor, Petite® Watercress Pink Ice™ is harvested approximately 4-6 weeks after sowing and is commonly used by chefs as a savory garnish. Petite® Watercress Pink Ice™ is favored for its brilliant coloring, crisp texture, and peppery flavor, used in a wide variety of culinary applications.
Petite® Watercress Pink Ice™ contains some manganese, calcium, antioxidants, and vitamins A, C, and K.
Petite® Watercress Pink Ice™ greens are best used raw as their tender and delicate nature cannot withstand prolonged periods of high heat. They are most commonly utilized as a garnish to enhance the flavor and visual appeal of a dish and can be lightly dressed in oils and acidic liquids without losing their texture. Petite® Watercress Pink Ice™ can be served over desserts such as a blackberry and shortbread crumble, tossed into leafy green salads, sprinkled over soups, or layered on burgers and sandwiches. The bright colored greens can also be used as a substitute for pepper and are often garnished on seafood dishes such as ahi, crab, salmon, and shrimp. Petite® Watercress Pink Ice™ pairs well with cucumbers, celery, asparagus, mint, peas, cherry tomatoes, watermelon, apples, oranges, persimmons, quince, and walnut. The greens will keep 7-10 days when stored unwashed, in a sealed container, and in the refrigerator.
