Petite® Watercress Red greens are small in size, averaging 10-12 centimeters in length, and have wide, oval to cordate shaped leaves with tender, slender stems. The purple leaves are flat, thin, and pliable, with many bright green veins branching across the surface, and the stems are also bright green, firm, and crisp. Petite® Watercress Red greens are crunchy with a peppery flavor but are not overpowering as they also contain a mild, slightly bitter, and spicy taste.
Petite® Watercress Red is available year-round.
Petite® Watercress Red is an early harvest, edible green that is a part of a trademarked line of specialty greens grown by Fresh Origins Farm, the leading national producer of both common and unique microgreens, located in San Diego, California. Designed to be slightly larger than microgreens, Petite® Watercress Red is harvested 4-6 weeks after sowing and is primarily used as an edible garnish to add a spicy, peppery flavor and to elevate flavor, texture, and visual appeal using its unusual coloring.
Petite® Watercress Red contains some antioxidants, iron, potassium, vitamins A and C, calcium, and folic acid.
Petite® Watercress Red greens have a peppery bite that is best suited for raw applications in savory dishes as their unique coloring will fade with cooking. The spicy greens are most commonly used as a garnish and can be tossed into salads, soups, stews, and stir-fries. They can also be sprinkled over rice dishes, layered into fresh spring rolls, mixed into grain bowls or pasta, combined into tacos, minced into pesto, garnished over cocktails, or blended into spreads that are served over toast. Petite® Watercress Red pairs well with shrimp, meats such as steak, pork, poultry, turkey, and fish, garlic, artichoke, radish, peas, carrots, celery, shiitake mushrooms, corn, butternut squash, arugula, cheeses such as goat, gorgonzola, parmesan, and blue, apples, tomatoes, citrus, golden beets, figs, pears, almonds, and balsamic vinegar. They will keep 7-10 days when stored unwashed, in a sealed container, in the refrigerator.
Petite® Greens were once only available to restaurant chefs as a gourmet garnish in the United States, but with the rise of social media, the greens have become widespread due to information dissemination traveling at a much faster rate. Consumers are becoming more aware of healthy, nutrient-dense foods such as watercress and have the opportunity to discover new produce via social media platforms. The spread of food photos has also inspired home cooks to use Petite® Greens because they are extremely easy to use and can add robust flavors and textures into dishes. Petite® Watercress Red is favored for its bright purple and green coloring and is often used to enhance the flavor of a dish with its peppery bite.
Petite® Watercress Red was created by Fresh Origins Farm in San Diego, California in the 1990s-2000s when the micro and Petite® Greens trend exploded in popularity as a new, modern take on garnishes with robust flavors. Today Petite® Watercress Red can be found through select partners of Fresh Origins, such as Specialty Produce, and are available across the United States.
