Description/Taste
Yellow onions are medium to large in size, averaging 5-10 centimeters in diameter and are globular in shape with rounded to slightly tapered ends. The bulb is encased in a light yellow to copper, dry, papery skin. The flaky, layered skin surrounds a white to cream-colored translucent flesh. The ringed flesh is firm, crisp, and juicy. Yellow onions are crunchy with a pungent flavor when raw, and when cooked, they develop a nutty, mild flavor with sweet undertones.

Yellow onions, botanically classified as Allium cepa, are one of the most popular storage varieties and are members of the Amaryllidaceae family. The term ‘Yellow onion’ is a broad label to encompass multiple known seed varieties of Yellow onions. Yellow onions account for over eighty percent of the United States onion crop and are the most widely grown onion varietal in northern Europe. In the United States, Yellow onions are classified for market based on diameter size, ranging from a creamer classification at less than two centimeters in diameter to super colossal at ten centimeters in diameter.

Applications
Yellow onions are the most common cooking onion and are best suited for both raw and cooked applications such as dry-roasting, sauteeing, grilling, caramelizing, and braising. Known for their use in the classic French Onion soup, Yellow onions are popularly chopped and used as a flavoring for soups, stews, and stocks. The onions can also be caramelized by cooking over low to medium heat, cooked into gratins, casseroles, and braises, or added to roasted meats and vegetables as a hearty side dish. Yellow onions pair well with cream sauces, curries, pasta dishes, parsley, basil, Dijon mustard, potatoes, green beans, peas, beets, turnips, tomatoes, paprika, red wine, light bodied vinegars, meats such as pork, poultry, turkey, veal, steak, beef, and white fish, goat, cheddar, and aged sheep’s cheese. The bulbs will keep 1-2 months when stored whole in a cool, dry, dark place with plenty of air circulation. Sliced Yellow onions will keep up to one week when stored in a sealed container in the refrigerator.

Yellow onions are a staple in cuisines around the globe and have played a prominent role in culture throughout history. Onions are referenced in some of the oldest Vedic writings from India. A Sumerian text from 2500 BCE accounts of someone plowing over the city governor’s onion patch. In Egypt, onions symbolized eternity to the Egyptians and were often found in tombs of Pharaohs where they were used medicinally, as offerings to the gods, and for mummification. The Romans and Greeks also used onions as sustenance for travel and as fortifying food for athletes before the Olympic games.
Geography/History
The onion is one of the oldest known cultivated vegetables believed to be grown for over 5000 years. Although there are still debates, it is thought that Yellow onions originated in Asia and were spread throughout the globe via traders and colonizers. Yellow onions are easily grown and thrive in a variety of soils and climates. The Yellow onion has adapted to a variety of climates from cold to temperate, semi-tropical and dry. Mature Yellow onions are ready for harvesting when the green top withers, falls over and starts to turn brown.
